Meals
We use only the finest ingredients sourced from Kyoto and Miyama—such as sweetfish (ayu), wild game, local mushrooms, and seasonal mountain vegetables—to craft unique dishes you won’t find anywhere else.
Guests who request breakfast or dinner can enjoy their meals in the comfort of Arita Villa.
Our private chef will prepare your meal right in front of you, allowing you to savor each dish freshly made and warm. Catering service is also available upon request.
Hisashi Nakayama
Owner-Chef of Shokudo Nakayama, Kyoto–Miyama
Rooted in the philosophy of Shindofuji—“body and land as one”—Chef Nakayama devotes himself to the blessings of local vegetables and the mountains, facing each ingredient with sincerity.
He carefully draws out the natural charm of each element, crafting dishes that respect and enhance their original character. He values staying close to the essence of each ingredient, ensuring that the “freshness” is felt even after cooking, and that the “naturalness” remains—even when transformed.
Each dish he creates tells a story of harmony between nature and people, delivered from the heart of Miyama’s countryside.
